In summer, the fruit that we eat the most is watermelon. After eating watermelons, that are many watermelon rinds left. Do you know that? Watermelon rinds also can be made as dishes. The watermelon rinds are classified into cool type in the point of view of traditional Chinese medicine. Firing watermelon rinds can let us to get cool, diuretic, step-down and anti-inflammatory. It can also reduce the sinking of cholesterol, soften and expand the blood vessels. I have found a few dishes which use watermelon rinds as ingredient, you may try to make them.
Sour and spicy rinds
Ingredients: Watermelon rinds 350g, cilantro, red bell pepper, lemon, soy sauce, white sugar, vinegar, chili sauce, garlic, sesame oil and pepper oil, each in the proper amount.
Steps: Select those thicker watermelon rinds and clean them, then remove the red flesh, green skin, cut it into small slides then. Mix soy sauce, salt, white sugar, vinegar, chili sauce, garlic and pepper oil to become a sauce, then add a few drops of lemon juice. Put the pieces of cilantro and red bell pepper into the sauce, then put it into the refrigerator, and we can eat it after 10 minutes.
Firing watermelon rinds
Ingredients: Watermelon rinds 350g, red bell pepper, scallion, garlic, black pepper, salt, white sugar and oil, each in the proper amount.
Steps: Select those thicker watermelon rinds and clean it.Then remove the red flesh, green skin, cut them into small slides. Cast some of salt on them for 15 minutes, then use water to remove the salt and dry the rinds. Cut the red bell pepper into shreds, flat beating the garlic, and cut the scallion into small piece. Add some oil and heat it, add the red bell pepper and garlic to fire for 2 minutes. After that, put the dry watermelon rinds inside and fry them for 3 minutes, then we can eat it after adding some salt, white sugar, black pepper and scallion.
Stew spareribs with watermelon rinds
Ingredients: Watermelon rinds 200g, spareribs 200g, 2 pieces of ginger and some salt
Steps: Wash the spareribs to make it clean, then put them into the boiling water for a while. Pour water into the pot, then put spareribs and pieces of ginger into it. Use strong fire to cook it until the soup boils, then use small fire to boil it for 40 minutes. Wash the watermelon rinds to make it clean, then remove the red flesh, green skin, cut them into small pieces. Put the rinds into the soup then use a strong fire, than weak fire to boil for 20 minutes, after that we can eat it by adding salts as you want.
Making jam with watermelon rinds
Ingredients: Watermelon rinds 600g, white sugar 100g, some lemon juice
Practice: Wash the watermelon rinds to make it clean, then remove the red flesh, green skin, cut them into small pieces, mix them in the mixer with adding some water. Put the mixture into a stainless steel pot, add some white sugar and lemon juice and mix it, boil it then switch to a weak fire, stir it from time to time, cook until the water dries out. Next, let the food to be cool and pour it into a bottle or a storage box, put it into a refrigerator with sealing after it is completely cool down. 2 or 3 days later, the jam will be more glutinous than before and it can be ate by now. Eat it with a clean and dry spoon, we can eat it with bread or porridge.
